1/2 cup (1 stick) softened butter, divided
1/4 cup brown sugar
1/4 cup white sugar
1 tsp cinnamon

4 tablespoons heavy cream (or 2 tablespoons milk + 1 tablespoon butter)

*1 tablespoon olive oil
*1 cup chopped mushrooms
*2 tablespoons worcestershire sauce (optional)
*1/2 tablespoon apple cider vinegar
*1 tablespoon tomato paste
*1/3 cup water
*1/2 tablespoon brown sugar
*1/4 cup ketchup (I’ve been using Simply Heintz, which is made without high-fructose corn syrup)

Ive been a vegetarian for almost a year and I’d have to say its pretty easy. I am, however, having trouble not eating seafood. I just sort cut it out cause I thought if I was going to go vego I might as well go all out right? Cause it’s always weird when a vegetarian eats seafood? But seafood has so many goodies in it! Like omega 3 that I can’t get from anywhere else. Plus it’d stop from eating carbs which would be awesome for making me not such a fatty boom-ba.
But should I do it? It feels like a step in the wrong direction. I was in the deli contemplating buying seafood and it just sort of felt weird. Like I was betraying some part of me. Ha ha blah blah blah so weird!
But I love it oh so much! Yum yum in my tum!
So what do you guys think? Are any of you vegetarians? That eat seafood or don’t? And if so, what’s your reasons behind it? I would love to know your thoughts! Vegans also wry welcome :)

- 1 can steak chili *Replace with Vegetarian Mince
- 1 cup red enchilada sauce

Mini Chocolate Bar Mug Brownie
INgredients:
1/4 cup flour
1/4 cup packed brown sugar
2 Tbsp unsweetened cocoa powder
Pinch salt
2 Tbsp canola or other mild vegetable oil
2 Tbsp milk, coffee or water
1 mini chocolate bar, such as Reese’s peanut butter cup, Oh Henry, Wunderbar, Caramilk, etc., chopped

Vermicelli Curd Bhath
Ingredients:
Vermicelli : 1/2 cup
Fresh Curd : 1.5 cups
Mustard Seeds : 1/2 tsp
Urad dal : 1/2 tsp
Chana Dal : 1/2 tsp
Finely chopped ginger : 1 tsp
Finely chopped green chillies : 3
Dried Red Chilli : 1
Curry Leaves : 1 sprig
Turmeric Powder : 1/8 tsp
A big pinch of hing
